Put the water, the trotters, the ham and the whole, peeled carrot in the quick cooker, season and cover and cook for 25 minutes. Remove everything and set aside. Dice the onions and garlic and fry them in a casserole dish with a dash of oil, add the flour and fry, then add the cayenne and the sliced carrot, the tomato sauce and the stock used to cook the trotters and cook everything for 20 minutes over a low heat. Remove the cayenne and mash the sauce to make it homogeneous and add the trotters to the sauce and cook for 10 minutes.
