Taco de Lengua de tenera stewed with wine

MODO DE PREPARACIÓN

First of all, we put the tongue in boiling water and cool it. Then slowly poach all the vegetables for 30 minutes, at which point add the red wine and allow to reduce until almost dry. add the tongue, the spices and cover with water and simmer for at least 2 hours. Then remove the tongue, leave to cool and peel. Pour in the resulting juice and reduce it to obtain a tasty and mellow sauce, which we set aside.

To serve, cut 4 or 5 cm high slices of tongue and brown in a non-stick frying pan on both sides. When it is very hot, add the sauce, also very hot, and decorate with vegetable balls and a sauté of squid that we have cut into strips half a centimetre thick.
