Make a small cut in the skin of the brains, put the brains in boiling water for 10 minutes and cool them in ice water, clean the skin, add them to the vegetables, which we have previously poached for 30 minutes, cover with water, and cook for 20 minutes with a bay leaf, at which point we take them out, drain them and beat them to obtain a paste which we cool. Once the dough is very cold, we make balls that we dip in the batter and fry in very hot oil for 1 minute.
